You can raise the height of the walls with bricks, and then the roof if the stone walls are solid and you have an approved building permit.

To raise the height of the walls will not make to much diference on the budget but surely will make on the well being of you two when you're at the room.

And the office extension could have been build with bricks and not with blocks. Since it´s a temporary thing and that the office will be be dismantled in near time. Only the office memories will remain there, and it´s not love.
